Turkey & Avocado Sandwich

Ingredients

8 Slices bread, toasted

2 Tablespoons mayonnaise

2 Hass Avocados, mashed

8 Slices red onion

8 Slices roasted turkey breast (or leftover from Christmas dinner)

8 slices bacon, cooked

8 Lettuce leaves

8 Slices of tomato

Sea salt and pepper

Serves

4

Method

  1. Spread one side of each slice of bread evenly with mayonnaise
  2. Spread half the number of bread slices with mashed avocado and top with the red onion
  3. Place the turkey, bacon, lettuce leaves and tomato on top
  4. Season with salt and pepper
  5. Top with the remaining slices of bread and serve immediately
